Steamed Sole with Black Bean Sauce
One of the secrets of steaming sole is to season the fish just before cooking. If the fish sits too long with the seasonings, the salt will extract water from the fish and, consequently, the fish will be less juicy. Try to choose a fish not longer than 14 inches, so that it will hang over the plate by no more than 1 1/2 inches on each end but will still fit in the steamer.
It is not necessary to purchase lemon sole for this recipe; just be sure the fish is very fresh and has the head and tail intact.

Bean and Swiss Chard Soup
Clearly this is an Italian soup. Biete is Swiss chard, usually green, although I have a fondness for the drama and beefy taste of the red-stemmed kind.

Glazed Chestnuts with Haricots Verts
Sortilège is a blend of Canadian whiskey and maple syrup. Here it infuses the chestnuts with maple flavor and picks up the sweetness of the green beans.

Omelets with Black Beans
Huevos Tirados
One of Gran Café de la Parroquia's specialties is this unique omelet, made with black beans and served inside out. Make the omelets one at a time and serve them immediately (they will dry out and lose their tenderness if you try to keep them warm in the oven). If you don't have time to prepare dried beans, canned will do just fine (see the cooks' notes for black beans, this page).
Active time: 45 min Start to finish: 2 3/4 hr (includes cooking dried beans)
Green Bean and Grape Tomato Salad with Kalamata Vinaigrette
Grape tomatoes are smaller than cherry tomatoes. If you’re using cherry tomatoes, cut them in half for this dish.
Fava Bean Soup with Carrot Cream
If you can't find fresh fava beans, use edamame (fresh green soybeans in the pod). You'll need to buy two pounds to yield the 3/4 cup for the recipe; do not peel. What to drink: Sauvignon Blanc or a dry Spanish white made from Albariño grapes.
