Coconut Southern Comfort Layer Cake

Don't let the good looks of this eight-layer beauty fool you; it's easy to make. Bake 4 cakes (we used 9" round metal cake pans, but disposable ones work fine), then slice each in half. Finish with toasted coconut, a knockout garnish that's also forgiving— it'll mask a less-than-perfect frosting job.

Apple Caramel Monkey Bread

This pull-apart bread, also called bubble bread, was inspired by a photo of Apple Cinnamon Monkey Bread in the King Arthur Flour's Baker's Catalogue. This bread looks just like the KAF version and tastes outrageous—not too sweet with a pleasing amount of caramel.

Cornmeal Biscotti with Cranberries and Pistachios

These green-and-red-studded biscotti look vaguely Christmassy but are good any time of year. Feel free to swap in other nuts or dried fruit—this combo is particularly pretty but you could use golden raisins, almonds, or hazelnuts as well. To make the biscotti even more decadent, dip in melted chocolate.

Apricot-Ginger Scones

These scones appear atop our deli case every morning, although not for long—we always sell out within a couple of hours. Unlike many scones, they’re not too sweet. Pair with a cup of coffee and the newspaper and you have the formula for a perfect Sunday morning. If you’re serving a crowd, this recipe can be doubled. You’ll need an extra-large bowl for your mixer, or you can make them by hand.

Apricot and Arugula Salad with Fresh Ricotta

This salad is a delightful interplay of sweet, creamy, tangy, and peppery flavors. If you prefer, you can swap in ricotta salata or a mild feta for the ricotta; both are saltier than fresh ricotta, so skip the seasoning with zest, salt, and pepper. Apricots have but a brief appearance even at the peak of their season. If you miss them, you can substitute with any other stone fruit. White nectarines, peaches, pluots, or plums would be particularly nice. In the fall, sliced fuyu persimmons are perfect. Whatever fruit you use, just make sure it’s ripe and flavorful.

Cardamom Rice Pudding with Golden Raisins

This fabulous pudding has all the flavors of kheer, the Indian rice dessert, but is richer and creamier thanks to the added egg yolks. Many rice pudding recipes are made entirely on the stove top, which requires lots of vigilant stirring (and watching). My version starts on the stove top but is finished in the oven, which leaves your hands free for other things. Chopped toasted pistachios make a nice garnish for this comforting dessert.

Stone Fruit Galette

This glorious galette, or rustic pie, will accommodate just about any fruit, but its open top makes a particularly pretty frame for the jeweled hues of summer’s stone fruits and berries; my favorites are apricot/blueberry for the beginning of summer, and peach/blackberry for the Fourth of July. Fig/raspberry, though not stone fruit, is great in the late summer and early fall. You could trim the dough into a neat round, but I prefer the rustic look of jaggedy edges—and leaving it untrimmed ensures that not a bit of the buttery dough goes to waste. Serve with plenty of fresh whipped cream or vanilla ice cream.

Yogurt with Honey, Figs, and Toasted Walnuts

This is the perfect simple ending to an elaborate meal (or any meal, really). It requires practically no prep and is infinitely modifiable. Figs out of season? Use apples, apricots, or orange segments instead. Don’t like walnuts? Use pistachios or hazelnuts. But you will get the richest, most decadent results by sticking with Greek yogurt.

Grilled Sardines with Charred Lemon and Chile Sauce

Sardines are small and abundant and have a short life cycle, making them one of the most sustainable fish out there. They’re low in mercury and other toxins that build up in larger fish. Plus, the method used to fish them produces very little bycatch and has minimal environmental impact. Best of all, they are quick-cooking, versatile, and tasty! They can hold up to the bold flavors of the accompanying sauce. This is finger food at its best, perfect for outdoor cooking—and eating. If you have any seasoned fruit wood or grapevines, add to the coals or use to build the fire—the flavor will take you directly to the Mediterranean. If it’s not grilling season, you can make this indoors in a well-seasoned cast-iron skillet instead.

Grilled Peaches with Blue Cheese and Hazelnuts

These grilled peaches are infinitely versatile: you can eat them by themselves as a light first course; for a more substantial salad, serve them on a bed of lightly dressed arugula. They are even lovely as dessert. The best part is that you can grill the peaches a few hours ahead of time and then assemble them just before serving. For best results, use peaches that are ripe but still relatively firm; the extra sturdiness makes them easier to manipulate on the grill. And freestone varieties (ones where the pit separates cleanly from the flesh) are by far easier to work with here than clingstones. If you can’t find hazelnuts, almonds or walnuts will work nicely, too.

Pan-Fried Pork Cutlets with Bing Cherries

Cherries are just as delightful in savory contexts as they are in sweet ones; here, they’re combined with sage and a little vinegar to complement the mild flavor of pork chops. This is a perfect dish for a romantic dinner for two. This is a classic example of a simple pan sauce and can be modified for different meats or seasons. Try swapping in different fruits, herbs, or vinegars, depending on your whims and desires. If cherries aren’t in season, figs or apricots would be especially good.

Apple Cranberry Turnovers

This dough is quite versatile and works for savory empanadas just as well as for sweet tarts and turnovers. It’s also incredibly easy to work with; not only does it resist sticking, but it’s almost impossible to overwork. (The secret is the cream cheese!) If you can, make a double batch of the dough and freeze for later use.
