Grilled Bananas With Coconut Sticky Rice

In this Cambodian treat (that is also a favorite in Vietnam), bananas are covered with coconut-infused sticky rice, wrapped in banana leaf, and grilled.

Almond Jelly with Lychees, Jackfruit, and Strawberries

Vietnamese cooks, like many other Asian cooks, make jellied treats from agar-agar. When a particularly grand presentation is on the menu, they use intricate molds to create multicolored desserts that look like elaborately decorated Western cakes. This simple almond jelly and fruit combo is a summertime favorite in my home. Originally prepared in China, the mildly sweet chunks of firm white jelly may be eaten alone, but they are more festive when accompanied with fruits. I use lychees and jackfruit, both of which are surprisingly good canned, along with fresh strawberries for contrast, but you may use any macerated or poached fruit you like. Twenty-five-gram packets of agar-agar powder (bot rau câu, or seaweed powder) are sold at Chinese and Southeast Asian markets. If the powder is not shelved with the agar-agar sticks or strands, ask for it; it is sometimes kept at the cash registers. Telephone brand from Thailand is popular. If you cannot find agar-agar, use unflavored gelatin.

Candied Coconut Ribbons

Nutty, rich, and just a touch sweet, these candied coconut ribbons are part of the regular assortment of sweets offered to guests during Tet. When I was growing up, the holiday was filled with visits to the homes of relatives and close friends. While the adults chatted and wished one another well for the year, I satiated myself with the sweetmeats and confections. These candied coconut ribbons were my favorites. Several years ago, I decided to make my own from a loosely written recipe found in an old Vietnamese cookbook. I mailed batches to my mother (a coconut lover) and invited her criticisms. After several rounds, I arrived at this recipe. Don’t be daunted by the need to crack open a coconut, as it is much easier than it sounds. In the end, you will be rewarded by the sweet coconut aroma that fills your kitchen and by a big batch of tasty candied coconut.

Candied Orange Peels

These sweetmeats are not traditional New Year fare, but since navel oranges are at their peak in California during Tet, the peels have found a place in my annual candy-making production. I use blemish-free organic oranges because the peel is what matters in this recipe. (Scrub the oranges well if they have a waxy coating.) The pith is included, but all the bitterness is removed in the candying process. For a touch of decadence, dip the peels in melted dark chocolate.

Banana Cake

The Vietnamese adore bananas, arguably the country’s national fruit. Many kinds—small, large, stubby, sweet, starchy—are available, and people know the seasonal and regional differences. A giant herb related to lilies and orchids, the entire banana plant (leaves, fruits, blossoms, trunk, and roots) is used in cooking. In Vietnam, my mother regularly bought a full bunch (about a hundred fruits) from a vendor. After we arrived in America, bananas continued to be one of our favorite fruits, but we ate fewer of them since they are costlier here. Whenever we had overripe bananas, we made this easy and delicious cake, which is among the most popular sweet banh preparations. Thin banana slices decorate the slightly caramelized top, and the cake itself has a puddinglike texture because of the large number of bananas in the batter. For the best flavor, use fragrant, extremely ripe fruit with deep yellow skin marked with lots of brown spots.

Currant Cookies

These butter cookies are one of my favorite French sweets in the Vietnamese repertoire. With just a few good ingredients, you can quickly bake a batch to serve alone or with ice cream, sorbet, or fresh fruit. When Vietnamese bakers make these cookies, they don’t normally include currants in the batter because the dried fruit is not readily available in Vietnam. They top each cookie with a raisin instead. Although currants are widely sold in the United States, Vietnamese American bakers still use raisins. I prefer to stir currants into the batter to distribute their chewy sweetness, and the results are closer to the original French version.

Adzuki Bean, Tapioca Noodle, and Coconut Sweet Soup

In this classic cold sweet soup, maroon adzuki beans and chewy clear tapioca noodles, jokingly called worms in Vietnamese because they are slippery and sticky, swim in rich coconut milk. I usually prepare all the ingredients in advance and then bring everything together at the last minute. The beans and coconut milk base may be prepared a few days ahead and refrigerated until serving time, and the sugar syrup keeps in a jar in the refrigerator indefinitely. The noodles, however, are best if readied only a few hours ahead. Adzuki beans are sold at Asian markets and health-food stores. Once you have made this version, you may substitute other beans, such as black beans, hulled mung beans, or black-eyed peas. You may also blend the beans for a mixture of colors and flavors.

Banana, Tapioca Pearl, and Coconut Sweet Soup

If you have never tried a Vietnamese che (sweet soup), this one is a good place to start. The perfume of the banana comes through wonderfully, and the tapioca pearls, enrobed in coconut milk, cook up to resemble large orbs of clear caviar. Once the tapioca pearls have fully expanded and set, the texture of this mildly sweet treat is like that of a thick Western-style tapioca pudding. Small, creamy bananas, such as the Nino variety, also known as Finger or Baby, are traditionally simmered for this sweet soup. They are sold at Asian and Latin markets. If they are unavailable, substitute regular bananas. Regardless of the variety, use ripe but firm, blemish-free fruits.

Mandarin Sorbet

Sweet, loose-skinned, and with few seeds mandarin oranges are more popular in Vietnam than regular oranges. The small fruits are commonly eaten as a peel-and-eat snack, but may they also be juiced and frozen for sorbet. Served alone or with a cookie, the sorbet is an elegant conclusion to a meal. Find the best tangerines, clementines, or satsumas in your area and juice them yourself. Avoid pasteurized juice, which can have an unpleasant cooked flavor.

Sour Fish Soup with Tamarind, Pineapple, and Okra

Rich with contrasts, this soup is easy to like. The tamarind and pineapple provide a sweet-and-sour edge, while the okra, tomato, and bean sprouts offer spongy, soft, and crunchy textures. The catfish and cumin ground the dish with their pungent, earthy qualities. If rice paddy herb (rau om) is available, use it for a citrusy accent. Sour fish soups are eaten throughout Southeast Asia. The Viet version often includes sliced taro stems (bac ha), a flavorless ingredient known for its ability to absorb other flavors. I generally omit the stems because they don’t contribute much to the soup, and instead increase the amount of okra, which is added at the end. If you can’t find fresh okra, use frozen whole okra, thawing it and slicing it before you add it to the pan. When fresh or frozen pineapple isn’t around, don’t resort to canned. It is not the same. The soup will be a bit tangier but equally sensational without the pineapple.

Banana Blossom Salad

My mother dislikes the slight astringency of this salad, but my father loves it. One day he secretly taught me how to make the salad. I was tickled then as now by its wild and tangly appearance, juicy texture, and earthy flavors. The element that brings the ingredients together is Vietnamese balm (kinh gioi), a splendid herb with hints of lemongrass and mint. You will find giant, burgundy teardrop-shaped fresh banana blossoms (illustrated on page 174), which are technically buds, in the produce section of Chinese and Vietnamese markets. Select one that feels firm and solid (not spongy) and has a tightly closed tip. The smaller the better because there is less astringency in the bracts (petal-like leaves) and flowers, which are both used here. The blossoms and balm are at their peak in the summer.

Green Papaya Salad

In the Vietnamese Kitchen, papaya is more than just a sweet fruit. The mild, firm flesh of an unripened green papaya is treated like a vegetable. Green papaya may be pickled, added to soup, or featured in salads like this one. Here, crunchy, light jade papaya shreds are flecked with chopped herbs and bits of shrimp and pork and tossed with a dressing of lime juice, fish sauce, and garlic. Look for green papayas at Vietnamese or Thai markets, Chinese markets with a Southeast Asian clientele, or Latin grocery stores. A bit of yellowing on the skin is fine, but make sure the flesh is neither soft nor mushy. Whole fruits will keep in the refrigerator for about a week.

Habanero-Mango Hot Sauce

I sometimes use this full-flavored hot sauce to spice up my Crab-Coconut Cocktail (page 79). It is also wonderful drizzled over raw oysters and clams and is one of the sauces served with the raw bar selections at Bar Americain. You must use really ripe mangoes for the best possible flavor. Also, it is extremely important to be very careful when handling the habanero. We use plastic gloves when working with these super-hot chiles, but whatever you do, make sure to keep your hands away from your face (especially your eyes!) until they are absolutely clean.

Pistachio Crème Caramel

This make-ahead dessert is a great choice for dinner parties—the individual servings take very little time to plate and garnish, so you can enjoy yourself while still wowing your dinner guests with an elegant, delicious finale. The recipe’s first step calls for infusing its liquid ingredients with chopped pistachios; though the nuts themselves are later strained and removed, their fresh, delicate sweetness flavors every creamy spoonful of the rich custard. Prepared pistachio paste (available online; see Sources) adds more nuttiness and body.

German’s Chocolate Cake

German’s Chocolate Cake is every bit as American as apple pie. German refers not to the country but rather to the last name of the originator of the type of chocolate used in the original recipe—Baker’s German’s Sweet Chocolate. I’ve kept the essentials of the classic recipe in place—chocolate cake layered with caramel, coconut, and pecans—but tweaked them just enough to proudly call this version my own. The cake itself is dark, moist, and truly chocolaty, and a glaze of chocolate ganache heightens the chocolate flavor without the overpowering sweetness of a traditional buttercream frosting. The real twist is found in the cake’s inner layers: my caramel of choice is cajeta, a liquid dulce de leche Mexican treat of sweetened goat’s milk cooked into a rich, syrupy caramel with smooth coconut milk. And forget a scoop of vanilla ice cream; fluffy coconut whipped cream is the last touch in this to-die-for dessert.
