Lemon Ice

Granita is nothing more than a flavored liquid (in this case lemon) sweetened with sugar and frozen until crystallized. Understanding this makes it very easy to make any flavor granita that you desire. You can also use orange juice for granita; simply freeze it as is. Should you choose to flavor your granita with alcohol, don’t add it to the syrup—it will inhibit the freezing process. Instead, pour it over the granita just before you serve it. It will get slushy, but a good slush on a hot summer day might be just the right thing.

Lemon Delight

The part of the sponge cake that is left behind after the rounds are cut for the delizie makes a nice snack. Although these are traditionally served robed in plain white, you could crumble the leftover cake into crumbs and sprinkle them over the fondant before it has a chance to harden.

“English Soup”

In this recipe, I prepare the zuppa inglese almost as you would a layer cake. Although the method is fairly easy, you may want to try the following more traditional and even easier way the first time you make it. Prepare all the components as described below, but assemble them thus: Line a 13 × 7–inch ceramic or glass serving dish with one layer of sponge cake, cut side up. Brush and fill the layers as described below, finishing with a layer of whipped cream over the top layer of cake. Chill and decorate as described below. To serve, spoon the zuppa inglese from the dish, passing any remaining whipped cream and pastry-cream sauce separately.

The texture of the chocolate-amaretto custard is very delicate, so be sure to slice the pears very thin, so you can eat the dessert with a spoon.

Monkfish Meatballs in Tomato Sauce

It is a good idea to roll up and fry one of these fish balls before forming the whole batch. You can check the seasoning and add a little salt and pepper if you like before you cook them all. Cooking a little sample is a good thing to keep in mind when you’re making meatballs, too.

Sole Meunière

You know how much I love olive oil, but there is a time and place for everything. When sautéing foods that cook quickly, like these sole fillets, using some butter along with the oil helps the sole brown before they overcook. Thicker sole or flounder fillets are ideal for this dish, but if yours are thinner, you may find it easier to handle them if you cut them in half first. Traditionally, the fillets are simmered in the sauce, but I like to cook the sauce separately and spoon it around the sole fillets—they stay crispier that way.

Breast of Chicken in a Light Lemon-Herb Sauce

The finished sauce will be lightly thickened by the bread crumbs that fall into it as the chicken bakes. My favorite way to serve this is with simply steamed green beans: set the chicken on top of the beans and pour the tasty sauce around the chicken, not over it—you want the bread crumbs to stay crunchy.

Cerignolas are large green olives, each the size of a plump almond, with a very nutty, buttery flavor. They are usually kept in brine. If you cannot find them, other brined green olives will do. But use the ones with pits, which you will remove. They have more flavor.

Oven-Braised Pork Chops with Red Onions and Pears

The sugar in the honey helps to caramelize the pork, onion, and pears as they oven-braise. It is a technique that works well with other roasted meats and birds as well. Just mix a little honey with the pan juices and baste or brush the roast with that during the last 10 minutes or so of roasting. For some dishes, you want the onions cut fine, so they almost disappear. Here, I cut the onions large—and the pears, too—so they keep their shape and don’t fall apart. Even when ripe, Bosc pears stay firmer than most, making them just right for this dish.

Sweetbreads with Lemon and Capers

Cleaning, rolling, poaching, and slicing the sweetbreads can be done in advance, but wait until the last minute to cook them and make the sauce. Two whole sweetbreads will serve six people—perfect if you’re preparing this recipe for sweetbread lovers. If your circle of sweetbread fans is smaller, simply make this recipe with one sweetbread and cut the rest of the ingredients in half. Veal sweetbreads are the thymus gland of young calves, which, when cooked, have a delicate flavor and a somewhat firm texture. Look for large, plump pairs of sweetbreads and trim off most of the outer membrane before you cook them, keeping enough intact to hold the sweetbreads together as they poach. (You can always trim more off after they cook.) My method of shaping and poaching the sweetbreads first, then pan-searing them just before serving, helps the sweetbreads keep their shape and reduces the amount of last-minute cooking. Save any less-than-perfect slices and the trimmings from the end of the sweetbread “sausage” as a treat for the cook, or as a first course for another meal. (If you can’t get to enjoy them right away, wrap them tightly and freeze them until you can.) Brown the sweetbread nuggets in a mix of butter and oil until crispy, remove them from the pan and drain them. Sauté some sliced mushrooms in the same pan, then toss the sweetbreads and mushrooms with a green salad dressed with lemon and oil.

Sweet and Sour Marinated Vegetables

Sometimes I peel eggplants completely, sometimes not at all. Leaving the peel on adds a slightly bitter taste—which I like—but also helps the eggplant hold its shape after you cut it into cubes or slices. If you want the best of both worlds, remove thick stripes of peel from the eggplant, leaving half the peel intact. Caponata can last several days in the refrigerator and is even better after marinating for a day. It is best eaten at room temperature, so remove it from the refrigerator about 2 hours before serving. Caponata is usually served as part of an antipasto assortment, although it makes a wonderful summer contorno, or side dish, to grilled meats or fish.

Berry Yummy Frozen Yogurt Pops

This recipe was created for my friend Bill, who told me he couldn’t get his daughter to eat fruit. I asked him what her favorite food was and the response was “ice cream.” (Well, what would you say?) These pops are mostly fruit, with just a little bit of “ice cream” made from low-fat Greek yogurt and sugar substitute. But when the pureed fruit was mixed with it, she couldn’t tell the difference. At just about 60 calories a pop, you can eat these all summer long.

Sugar-Free Rice Pudding

Traditional rice pudding contains cream, eggs, and sugar. You’ll find none of that here. You will find healthful whole-grain brown rice, raisins, creamy Greek yogurt, and lovely flavor from real vanilla bean and cinnamon. Eat any leftovers for breakfast.

Peach and Blueberry Cobbler with Ginger and Cinnamon

This is a gorgeous dessert and naturally low in calories, as long as you don’t add a ton of sugar and don’t serve it with whipped cream. It just doesn’t need it. In the heat of the oven, as they steam under the topping, the peaches and blueberries meld into a magical, flavorful filling that needs little help from sugar or fat. The spices are really all the fruit requires.
