Leek

Barbecued Pork Fried Rice

For an especially quick and easy meal, buy prepared Chinese barbecued pork loin (3/4 pound will be plenty). This pink-tinged meat is available at many Asian supermarkets—or you may even be able to purchase it from your neighborhood Chinese restaurant.

Oyster Soup with Frizzled Leeks

It's very important to use small oysters — such as Kumamoto or Prince Edward Island — in this soup. The oysters themselves (not the shell) should be no more than 1 to 1 1/2 inches in diameter. When we tested the recipe with larger ones, the flavor was much too briny.

Clam and Oyster Chowder

Laura Trevino of Washington, D.C., writes: "This hearty chowder is the perfect thing for a chilly evening. Serve it with dark beer and crusty bread or oyster crackers."

Red Snapper with Leeks and Tomatoes

Accompany the fish with mashed potatoes, rice pilaf or buttered noodles.

Stir-Fried Tofu and Shiitake Mushrooms in Spicy Black Bean Sauce

Beefy shiitake mushrooms stand in for the standard ground pork in this version of ma po tofu. What to drink: The bit of heat here calls for a spicy white wine with ripe fruit and crisp acidity, such as a Riesling from Alsace or Germany's Rheingau.

Braised Chicken with Leeks and Morels

Serve this rustic dish with French bread or rice to savor every last drop.

Warm Leeks Vinaigrette

Can be prepared in 45 minutes or less.

Mashed Potatoes, Pears and Leeks

Pears add sweetness and texture to these mashed potatoes. Also serve sautéed summer squash to round out the main course.

Braised Chicken Breasts on Creamy Leeks

We adapted this dish from a recipe in La Cuisine Spontanée by Swiss chef Frédy Girardet. Braising the chicken breasts over the leeks keeps them satisfyingly moist and tender. Crusty bread is a good accompaniment.

Ham and Yukon Gold Potato Cakes

These can be cooked two hours ahead, then rewarmed in the oven just before serving.

Coq en Daube

Leek and Salmon Chowder

This is a delicate, light-tasting soup.

Wild Striped Bass with Charred Leeks and Squid Vinaigrette

Wild striped bass is an incredible delicacy on the order of wild king salmon. To complement its robust flavor and steak-like texture, we serve it with a beautiful and aggressive squid vinaigrette. This is not a dish for people who are on the fence about eating fish.
