It comes from an absolute expert on the dish—and the guest editor of our summer magazine issue—José Andrés. Needing little introduction, Andrés is an acclaimed chef, humanitarian, and eight-time cookbook author, including The World Central Kitchen Cookbook, Zaytinya, and most recently Spain My Way.
