This summery fresh mango salsa recipe has just six ingredients: ripe mango, diced red onion, jalapeño for a little kick, cilantro, cherry tomatoes, and fresh lime juice. It’s sweet, spicy, and bright, and makes a great appetizer with tortilla chips or simple accompaniment to fish tacos, grilled chicken or shrimp, or burrito bowls. 1 ripe large mango, cut into about ½" pieces
1 small red onion, finely chopped
1 small jalapeño, thinly sliced
½ cup coarsely chopped cilantro
¼ cup cherry tomatoes, quartered (optional)
1 Tbsp. plus 1½ tsp. fresh lime juice
1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt

Place 1 ripe large mango, cut into about ½" pieces, 1 small red onion, finely chopped, 1 small jalapeño, thinly sliced, ½ cup coarsely chopped cilantro¼ cup cherry tomatoes, quartered (if using), and 1 Tbsp. plus 1½ tsp. fresh lime juice in a bowl.
