Maple-Glazed Doughnuts

These light and fluffy yeasted doughnuts are coated with rich maple glaze for an effect reminiscent of a pancake breakfast. The key to making these—or Samantha’s Cardamom-Cream-Filled Doughnuts—is using a pot that’s deep enough to hold a couple inches of oil and still has another inch or two of empty space above it.
