Ingredients

3/4 cup chopped red onion
3/4 teaspoon olive oil
1 tablespoon balsamic vinegar
1/3 cup couscous
1/2 cup boiling water
2 tablespoons chopped fresh chives

Preparation

  1. In a saucepan cook onion in oil over moderately low heat, stirring, until softened. Add vinegar and cook 1 minute. Remove pan from heat and stir in couscous, boiling water, and salt and pepper to taste. Let couscous mixture stand, covered, 5 minutes. Fluff couscous with a fork and stir in chives.
