I probably make meatloaf once a week, and Iāve developed some pretty strong opinions about what works and what doesnāt. I have sampled meatloaf across the country, and when itās good, itās usually because itās a simple rendition. If I donāt like it, itās usually because someone tried to get fancy with it and put something in it that didnāt belong there! This is the one I make most often. I prefer to use lean ground beef because it keeps the meatloaf from being too moist. Also, be sure to remove the meatloaf from the pan as soon as itās done; otherwise, the fat that has rendered into the pan will be absorbed back into the meatānot good!

Preheat the oven to 350°F.

Gently mix the beef, cracker crumbs, egg, ketchup, mustard, salt, pepper, and onion until blended. Shape the mixture into two loaves and place side by side crosswise in a 9 Ć 3 Ć 2-inch pan. Bake the loaves for 1 hour, or until they are browned. Transfer to a platter immediately and allow the loaves to cool slightly and firm up before slicing.
