This watermelon cocktail, inspired by the song by the Fania All-Stars, is a thirst quencher that makes us dream of dancing the night away to live salsa music.

  

To make fresh watermelon juice without a juicer, simply press about 1 cup ripe watermelon chunks through a colander or large wire mesh strainer using a wooden spoon, or blend in a blender until smooth. Strain through a fine-mesh strainer before using. To make crushed ice, fill a zip-top bag with ice, wrap in a kitchen towel, and smash with a mallet or rolling pin.

Cook’s note: 

To make the simple syrup, combine ½ cup granulated sugar with ½ cup water in a small saucepan and bring to a simmer, stirring to dissolve sugar completely. Let cool to room temperature, then refrigerate up to 2 weeks.

Ingredients

½ oz. Martini & Rossi Fiero Aperitivo
1 oz. watermelon juice (see headnote)
½ oz. lime juice
½ oz. simple syrup (1:1, see note)
Garnish: Watermelon slice, lime slice

  1. Stir together BACARDÍ™ Ocho, Martini & Rossi Fiero, watermelon juice, lime juice, and simple syrup in a glass. Fill a large rocks glass with crushed ice, garnish with watermelon and lime slice.
