Cooks' Note

Rub can also be prepared with white sugar substituted for brown. Meat can be coated with rub up to an hour before grilling and stored in refrigerator until ready. If the Top Chef in you is calling, try substituting the black pepper amount with the following spice combination: Coriander, ground 2 TBS 7 grams Fennel Seeds, ground 1 TBS 4 grams Star Anise, ground 1 TBS 6 grams
