This riff on a Tom Collins calls for Japanese whisky, which is known for being exceptionally balanced and smooth. Your favorite Scotch whisky is a good substitute.

Ingredients

1/3 cup sugar
2 cups Japanese whisky (such as Nikka or Suntory)
1 cup fresh lemon juice (from about 5 lemons)
1 12-ounce can club soda
Lemon twists (optional; for serving)

Preparation

  1. Step 1

    Combine sugar and 1/3 cup water in a jar. Cover; shake until sugar dissolves. Combine syrup, whisky, lemon juice, and club soda in a large pitcher. Add 8 cups ice; stir until ice begins to melt, about 1 minute. Serve over ice, garnished with lemon twists, if desired.

    DO AHEAD: Syrup can be made 3 months ahead; cover and chill.
