Is also known as polished rice because it is processed to remove both its hull and bran. Enriched white rice has thiamine, niacin, and iron added. It comes in long-grain, medium-grain, and short-grain varieties. Cook white rice like brown rice but with less water (1 3/4 cups water to 1 cup rice) and significantly less simmering time (12 to 15 minutes).
