Blueberry Cocoa Nib Crumble

It was summer in New England the first time I read about the health benefits of blueberries. I rushed to the pick-your-own patch on a nearby hill. I put several perfect ones in my palm with all their little hats aligned—an army of antioxidant soldiers. I ate them. Sweet, with a tang. Yet, sadly, I felt nothing. My blood did not quicken; my heart did not swell with strength. I was my just my same old self, munching a handful of blueberries by the side of the road. In my chocolate research, this moment comes to mind often. The benefits of chocolate arrive quietly amid a myriad of other healthful living components. Health through chocolate is a practice. Chocolate and blueberries, both miracles of nature, join here for a berry breakfast or homey, warm dessert.

Cherry Tart with Cocoa Nib Crust

Chocolate crust cradles a bevy of “superfoods,” including almonds, cherries, and eggs. Inspired by the French classic clafoutis, this tart is “choc full” of cherries. They float jewel-like inside a sweet, vanilla-scented custard. By the way, here are three good ways to pit a cherry: (1) Use an old-fashioned vegetable peeler that has a curved edge on top to scratch around the top of the cherry pit, then dig around the stone, scoop under it, and it will pop right out; (2) use a paring knife as above (but watch out—it’s easy to slice your fingertips); (3) use a cherry-pitter carried by some gourmet kitchen stores—a special tool invented just for this job! This recipe requires only half a batch of the Chocolate Sugar Dough—make a full batch and freeze half for future crust or cookie needs.

Roasted Lemon Pork with Cinnamon Sweet Potatoes

While this meat-and-potatoes combo cooks, prepare a green vegetable and one of our speedy desserts.

Cranberry-Topped Meat Loaf

Shredded potatoes serve as a tasty alternative to the bread crumbs that traditionally hold meat loaf ingredients together.

Turkey Breast with Cranberry Sage Stuffing

You may want to prepare this meal quite often—not just for the holidays—when you see how easy it is.

Grilled Turkey Cutlets with Pineapple

Try these citrus-flavored cutlets with sweet potatoes sprinkled with nutmeg. If you double the recipe except the pineapple slices, you’ll have enough turkey for Turkey Tortilla Soup (page 54), too.

Taco-Rubbed Flank Steak

To add lots of flavor and no fat to meats, rub them with a spice rub. Make the rub mild to extra-spicy, depending on the level of heat you like best. Use leftovers from this recipe for Flank Steak Burritos (page 186) or Cook’s-Choice Fried Rice (page 210).

Picante Cube Steaks

While the steak is simmering, prepare instant brown rice to serve with the sweet and spicy sauce. Round out the meal with tossed salad or your favorite green vegetable.

Orange-Marinated Flank Steak

Here’s the recipe to turn to when you want to spend your time with your family or friends, not in the kitchen. Just refrigerate lean flank steak in a lively orange marinade for up to 48 hours, then quickly grill indoors or out.

Black Beans and Rice

To jazz up black beans and rice, add the exciting flavors of rich olive oil, tangy lime juice, and assertive garlic.

Pan-Blackened Scallops Over Lemon Rice

If you love spicy food, this dish is for you. The combination of blackening spice and chutney will tantalize your taste buds.

Hawaiian-Style Tuna

With its rainbow of colors, this all-in-one dinner looks and tastes great.

Tilapia with Artichokes and Sun-Dried Tomatoes

Tilapia, a farm-raised fish, has a very delicate flavor, similar to that of sole. In this recipe, tilapia combines superbly with white wine, sun-dried tomatoes, and artichoke hearts for a dish fit for almost any occasion.

Pan-Seared Tilapia with Fresh Fruit Salsa

A colorful trio of fresh fruits, coupled with the spiciness of jalapeño pepper, enlivens the flavor of mild tilapia.

Citrus Sole

Orange marmalade brings a completely different taste to an already wonderful combination of seafood and citrus juices.

Lemony Salmon Fettuccine

This quick dish tastes so rich and flavorful!

Avocado Veggie Wraps

This pita wrap is bulging with vegetables combined with a lime and sour cream dressing.

Orange-Flavored Acorn Squash and Sweet Potato

Serve this attractive side dish with your holiday meal or with roast beef for Sunday dinner. Baking at a high temperature slightly caramelizes the bottom of the squash for a delightful taste.

Savory Pecan Rice

With their assertive flavors, the dried cherries, pecans, and mushrooms in this dish pair well with poultry or game. You can also use this recipe to make a vegetarian stuffing for baked winter squash, such as butternut.

Salad Greens with Chicken, Mandarin Oranges, and Asian Vinaigrette

A small amount of intensely flavored dressing goes a long way in this brilliantly colored salad.
