Use this versatile sauce as a dip for crudités, a dressing for cold fish or chicken, and as a substitute for mayonnaise. Tofu makes it virtually fat-free.

Ingredients

10 1/4 ounces soft tofu, drained
3 tablespoons Dijon mustard
1 tablespoon fresh lemon juice
1 small garlic clove
1 bunch fresh chives, minced

Preparation

  1. Purée first 4 ingredients in blender or processor until smooth. Season to taste with salt and pepper. Transfer mixture to small bowl. Stir in chives.(Can be prepared 4 days ahead. Cover and chill.)
