Ingredients

2 pounds Granny Smith apples, cored, peeled, sliced
2 pounds Golden Delicious apples, cored, peeled, sliced
2 cups water
2 tablespoons (or more) fresh lemon juice
1/2 cup sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon (generous) ground cardamom

Preparation

  1. Combine first 4 ingredients in heavy large Dutch oven; bring to boil over high heat. Reduce heat to medium; cover and simmer until apples are tender, about 20 minutes. Uncover and cook until mixture is thick, stirring frequently, about 10 minutes longer. Mash apples slightly with potato masher until chunky applesauce forms. Stir in sugar and spices. Cool. Add more lemon juice if desired. Transfer to bowl; cover and chill overnight. (Can be made 2 days ahead. Keep refrigerated.)
