Farewell Zucchini Bread

Ingredients

1Ā 1/2 cups flour
1 cup brown sugar
2 teaspoons cinnamon
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup shredded zucchini
1 cup chopped nuts, 1/2 cup raisins, or 1/2 cup chopped nuts plus 1/4 cup chopped dried fruit (optional)
2 eggs, lightly beaten
1/2 cup vegetable oil
1 teaspoon vanilla extract

Preparation

  1. Step 1

    Preheat the oven to 350°F. Grease a 9 by 5-inch loaf pan.

    Step 2

    In a large bowl, combine the flour, sugar, cinnamon, baking soda, baking powder, and salt. Add the zucchini and the nuts and/or dried fruit, if you’re using them. Stir together until the ingredients are well distributed.

    Step 3

    In a small bowl, combine the eggs, oil, and vanilla. Add the wet ingredients to the dry ingredients and combine with a few gentle folding motions. Pour the batter into the prepared loaf pan and place in the middle of the oven. Bake until a toothpick inserted into the middle comes out clean, about 1 hour.

    Step 4

    Alternatively, this recipe can be made very quickly in a food processor. Dump everything into the bowl and process for 5 to 10 seconds. It’ll look lumpy, but that’s just fine. Bake as above. Be sure the loaves are cool before you wrap them for freezing.
