Ingredients

1/4 pound whole-wheat elbow macaroni
1/4 cup chopped red onion
1/4 cup chopped green bell pepper
1 medium tomato, roughly chopped
2 tablespoons sliced pimiento-stuffed green olives
1/4 cup mayonnaise
1 tablespoon red wine vinegar
1 teaspoon Dijon mustard
1/4 teaspoon salt
1/8 teaspoon ground black pepper

Preparation

  1. Bring a medium pot of water (about 4 cups) to a boil. Add the macaroni and cook until al dente, 7 to 8 minutes. Meanwhile, combine the onion, bell pepper, tomato, and olives in a large bowl.
